Wet garlic is garlic that has not been through the curing (drying) process, a nice substitute before dried garlic comes into season. The cloves contain more moisture than dried garlic and so provide a more mellow garlic flavour, perfect if you're cooking a dish that requires raw garlic.
You can also use the stalk as long as you cook it for a while. Chop finely and use as the base of a dish or to flavour stock.
