Citrusy Avocado & Radish Toast

Ingredients

· 2 slices of bread
· 1 avocado
· 1 radish
· 1 tablespoon fresh orange/lemon juice
· 1 teaspoon Enzo clementine olive oil
· 2 teaspoons orange/lemon zest
· Salt/pepper to taste

Directions

Toast the bread. Add avocado to a small bowl with the fresh squeezed juice, salt and pepper, then mash with a fork. Cover each piece of toast with the mashed avocado and sprinkle on the radishes. Drizzle with olive oil and add the zest. Season to taste. Serve & enjoy with scrambled eggs.

The produce has been delicious, and I’ve especially enjoyed cooking with unfamiliar veg such as kohlrabi and globe artichokes (I’m obsessed! So delicious and fun to eat) It’s also been fascinating to read the weekly newsletter.
